Surviving in the Big Falafel
Most people now begin realizing that they live in the matrix. What most people don’t realize is that the matrix lives in them.

For a number of years I lived in downtown Tel Aviv. Though in many ways it was great being there, I had had enough of the big city. When I left about 4 years ago, I told myself that I would never move back. Well, as the saying goes, “man plans and god laughs”.
Here I am, back in Tel Aviv for a couple of months. Not only that, I'm smack in the midst of it all, on the corner of Allenby St. right near Sheinkin. You can’t be any more downtown than that..

In the center of the Humous plate.
In the heart of the big Falafel! This newsletter is dedicated to surviving in downtown Tel Aviv, or for that matter, in any big city.

Some of my tips for Life in general and for Big Cities in particular:
1. Live in walking distance from the sea, the ocean, or a big park – for me this is major. If you are surrounded by buildings, buses and cement, at least have a close place you can walk to, to get some nature flowing through your veins.
2. Move your body. Go out for walks. I feel really sorry for dogs living in cities, but on the other hand they do take us out for walks.
3. Eat plenty of fruits and vegetables – full of vitamins, minerals and antioxidants. We definitely need those antioxidants, breathing the city air.
4. Eat loads of fresh raw green leaves (arugula, mangold, spinach, parsley, coriander,
mint …) – the green leaves are like little trees, giving us the oxygen we lack in city life.
5. Slow Down – City life has a very fast pace. Try to slow down: eat slowly, take your time, don’t over schedule your day…
6. Find time to connect to something beyond the physical world: yoga, meditation, tai chi, chi cong, dancing, drawing …. any activity. For me, this is a life saver.
7. Leave the city every few weeks. Go on a day trip. Take a weekend off. Go somewhere green. Reenergize yourself.
8. cook!! Don’t eat out every day.
9. Have plenty of plants in your home and if you can, grow a vegetable garden or have a window box.
10. If/when you can, move out of the city for good.

Eating out
Living in the city, we tend to eat out more often. It is convenient and a social thing. But after a while you start feeling it, in your pocket, in your energy level and in your stomach. So, try cooking at home more often. My recommendation when eating out, however, is to always order a big salad with your meal.
Here are a few tasty and healthy options I found in my area of Tel Aviv:
Buddha Burger – they have a great salad bar at the one at 21 Yehuda Halevi St.
Café Birnbaum – great Buffet at lunch time. 31 Nachalat Binyamin St.
Sushido – along with the sushi, they have big salads you can order. 15 Rothschild Blvd. Hatachtit – not bad as far as coffee shops/restaurants go. They also have big salads, quinoa dishes and lots of people working on their laptops. 9 Lincoln St.

Recipe of the Month
Healthy Apple Cinnamon Cake
From age 24 till 36 I had a cake business, providing my cakes to all the major coffee chains and shops in Israel. When I started that business I wasn’t aware of healthy food as much as I am today but as the years went by I gradually grew closer to healthy nutrition and further away from my cakes. My first and most successful cake was my (mother's) apple cake (funny that it was the first cake recipe she ever baked…). It has been about 3 years since I last baked a cake. This month, for a birthday,
I decided to bake a healthier version of the best apple cake ever.
Ingredients:
2 organic eggs
2/3 cup organic cane sugar
½ cup melted organic coconut oil
¼ cup freshly squeezed orange juice
half a vanilla pod- scarpe out (or 1 teaspoon real vanilla extract)
1 ½ cup flour (regular, whole grain or half half)
1 ½ tsp. baking powder (try to find the kind that has no aluminum)
¼ tsp. sea salt
2 apples – cut into small cubes, and 6 slices cinnamon and organic cane sugar
Method:
In mixer cream eggs andsugar well Add oil, orange juice and vanilla pextract and blend.
Reduce speed and add flour with baking powder.
Be careful not to over mix. Place some of the batter in a greased pan with parchment paper, add cubed apples, and sprinkle well with sugar and cinnamon.
Place remaining batter over apples, decorate with sliced applesand sprinkle again with sugar and cinnamon.
Bake 180C/350F for about 50 minutes.
check with toothpick that the cake is ready.
