Again we are at the end of yet another year. It is always so interesting to look back over the past year and see how we did.
For me this was a year of doing less and simplifying. 
Of choosing the path of least resistance that ironically gets us achieving more.
Because our lives have all become so complex, with so much to do, so much multitasking and so much technology, I feel that a great gift is to help ourselves eliminate things. To take them off our “to do lists” and focus on what is really necessary and what we really want, versus what “we have to\should do”.

Great questions to ask ourselves:

How was my past year? What would I like to be different in 2015?
How can I simplify my life?
What can I eliminate? What is unnecessary?
What can I delegate?

And now to politics…. 

The situation in Israel and Gaza has been breaking my heart. I hope things are now going in a better direction....

On a positive note, we had a little family gathering the other day with all the Russell cousins. 

We are a multicultural family: Muslims, Hindus, Jews, Christians…
all together in one family. 




Wouldn’t it be amazing if in the near future the world will grow beyond the dividing attitudes of religions, countries and wars and everyone would be able to just live in peace? 

How can each one of us contribute to that…?
Maybe even just by sending out that thought ?
Thoughts and intentions are very very powerful!!



Or by making a multicultural moment happen,
sharing together in any way with someone who is “the other”...

The Most Important Vitamin Ever


For the last three years I have been more in Ireland than anywhere else. I have been missing the summer heat and lacking sunshine. For the past few years I have also had more colds than I can ever remember. I just recently understood what was going on. I had some blood tests done. Everything is fine and within the normal, but sometimes what is considered by the medical industry as normal, might not be what is really the most healthy.

In this newsletter I would like to talk about one of the most important and forgotten vitamins: VITAMIN D
My levels are 26 ng/ml (normal is considered somewhere between 20-100 ng/ml)
but I am still on the low side.
Actually healthy levels really would be somewhere around 50-60 ng/ml.
So I have a mission now to raise my levels, though it will take a few good months of vitamin D supplementation and sunlight exposure.

What is Vitamin D?
Vitamin D is produced by your skin in response to exposure to ultraviolet radiation from natural sunlight.
It is perhaps the most underrated nutrient in the world of nutrition. Maybe because it’s free?


Why is it so important?
-It prevents colds, osteoporosis, depression, prostate cancer, breast cancer, and even affects diabetes and obesity.
-It is crucial for calcium absorption - without sufficient vitamin D, your body cannot absorb calcium.


How do you get it?
- Mostly from the sun. But remember the healing rays of natural sunlight that generate vitamin D in our skin cannot penetrate glass. So you don’t generate vitamin D when sitting in your car or home. And you don’t get it if you have any sunscreen on.

- From some foods: good milk, eggs and oily fish.

What to do in order to reverse Vitamin D deficiency?
- Get plenty of sun. The best hours for UVB radiation are at mid-day (20-40 minutes a day, depending on the time of the year - in winter even more), and depending on your skin color (the darker you are the longer you have to be in the sun). You don’t want to burn your skin but getting it a bit pinkish, gradually toning to a darker color, is very healthy.
- Take a good vitamin D3 supplement
- Take vitamin K2, which helps in vitamin D absorption.

If when you press firmly on your sternum it hurts, you might be suffering from chronic vitamin D deficiency right now.
Even though vitamin D is one of the most powerful healing chemicals in our body, our body makes it absolutely free. No prescription required.

Healthy Falafel Recipe

I have not only been missing the sun but Israel in general as well. When I am in Israel I rarely eat falafel, since it is deep fried in unhealthy oils. But falafel is actually very healthy and simple to make. I just made a healthy Israeli meal here in Ireland.



Following is the Winning Falafel Recipe I used, with a few of my healthy additions.

Don't forget to have a ready pile of puffy pitas, good tahini, a chopped vegetable salad, pickles and other additions you love. Plus hummus.


Ingredients: 

( For about 25 balls )
2 cups chickpeas, soaked in water for 12 hours or so
2 slices of brown bread, crumbs (crumble in a food processor)
5 cloves of garlic, chopped
2 teaspoons baking soda (add later)
1/3 cup chopped parsley
1/2 cup chopped cilantro
1/2 small onion
1 heaped tablespoon sesame seeds (optional)
1 teaspoon cumin
1 teaspoon paprika
Himalayan sea salt (less than a teaspoon)
Pepper
Olive oil for deep frying (use only once)


Preparation:


A. Rinse and drain the chickpeas and place in a food processor with the garlic, onion and spices.
Process until pasty, coarse and moist. If needed, add some water.
B. Transfer to a bowl, add the remaining ingredients and mix well.
C. Cover and refrigerate for one half to one hour.
D. Heat oil in a deep pot (should be hot but not boiling).
E. Add the baking soda to the chickpea mixture and mix well.
F. Form into balls and deep fry until they are the color of falafel.

Tips: 

-Even if you don't like cilantro, don't leave it out - cilantro changes flavor when fried and if you're stingy with it, your falafel will be blah.
-If you prepared too much, freeze in balls and thaw just before frying.
-Before frying all the balls, fry one and taste it - to check if you need to adjust the seasoning.
-Does the falafel feel too solid? Add a little water, bread crumbs and baking soda, let the mixture sit for a little while and try it out by frying another ball.

Why We Are Fat

I just watched this great three episode documentary: ‘The Men Who Made Us Fat.’

I really recommend watching it! It's all about the food industry, the obesity crisis, why we eat what we eat, why we are fat, why governments aren’t changing food policies and more.

Do you also feel that you know what you have to do to be healthy and have your body at the right weight for you (“eat more fruits and veg….”), but that you still seem to be struggling?
You aren’t alone! 

So many people seem to be on a diet and are still unhappy with their body weight.

A few important reminders that many of us seem to forget:

1. Read Food Labels
I Always always always tell people not to believe what is printed on food packages. Health is an ever growing business and many food companies are jumping on board the “healthy bus.” Do you feel that everyone is trying to sell us healthy products or make their product be "perceived as healthy”? Don’t believe the product is healthy solely because of the big SELLING words that are written everywhere:  Natural, Healthy, Whole Food, Organic etc….

Make sure you always read the entire list of ingredients on the back of the package! Minimize consumption of foods that have sugar, in its many different names: sorbitol, maltitol, sucrose, glucose, corn syrup, cane sugar, brown sugar, honey (usually wouldn’t be real healthy honey) … as the main ingredient (meaning if it is in the four first ingredients or is written many different times) and especially stay away from High Fructose Corn Syrup!

2. Stay Away From High Fructose Corn Syrup!!! WHY??

High Fructose Corn Syrup is one ingredient that you still find in many products and hopefully in the near future it will disappear off the list. HFCS is one of the main ingredients that made America (and the world is following) fat-obese and sick. Diabetes is one of the illnesses caused by over consumption of sugar, and now shockingly, kids have it too!

HFCS deactivates the hormone Leptin, which tells your brain when we have eaten enough. So you will keep on eating and eating and eating and still stay hungry. Great for the food industry, horrible for us. HFCS is in almost all processed foods, plus also in soda drinks, pizza, cakes, breads, candy bars, salad dressings.

3. Processed food, low in nutrients, will MAKE you overeat!

Our body is designed to eat food and feel satisfied when it has eaten enough. Processed foods, and diet foods as well, are so low in nutrition that you will never feel satisfied and will never be able to just have “one.” Eat real food, and forget about counting the calories. Eat food that will give your body nutrition and notice how you won’t have to eat as much.

Next time you have a meal ask yourself: 
“Was this made in a factory? A laboratory?
Or in a kitchen and is this food pretty close to the way nature made it?” 

Try to cook your own food from scratch. 

Try to order a salad with your meal. 
Drink more water.


4. Stay away from anything that has the words: 
LOW, DIET, LIGHT, ZERO, SLIM

They will all make you
LOW ON ENERGY, SICK, HEAVY

There are a few foodstuffs which people try to cut out of their life in order “to lose weight”, and I say, eat the real version of them!


Eat real healthy oils (like coconut oil, olive oil, nuts, seeds, avocado, real butter). Oils are very important! Without oils you won’t feel full and your body won’t work properly.

Eat real bread (whole grain, spelt, rye) - stay away from all the diet\light breads and crackers – they will make you fat and you will never feel satisfied.

Eat real 70%-85% chocolate – stay away from all the ‘nature valley’, low, diet chocolate, “granola” bars, diet cookies…

Eat fruit instead of cookies and cakes.

I am not extreme. I do drink coffee, I have a little cake, I eat out…
but here are some foods I will never eat or drink:

Soda drinks and pasteurized fruit juices - 100% empty calories
Deep fried foods like donuts, French fries, bagged chips … (100% unhealthy toxic oils)
Foods with toxic food colorings (don’t give those blue candies to your children).
Diet foods (loaded with carcinogenic sweeteners) and will make you very FAT!
