The truth on Chanukanola

Wow! 2010 is coming to an end and the Jewish Holiday of Chanukah is just around the corner. A holiday of fried foods and rancid oils. Sorry to sound so pessimistic, but the truth must be said. I have nothing against oils, and on the contrary,
I eat loads of oil but the qu
estion is what oils are we eating and maybe even more important what oils are we heating ?

So here is a bit of info on oils for a healthy holiday:

ut Oil - The Queen of all Oils
This is the one we want to be eating and heating

Contains Medium Chain Fatty Acids (MFC's) - which are very easily digested and are not normally stored in the body as fat. Instead they are quickly converted to energy, great for weight loss.

Contains High Amounts of Lauric Acid – a proven antiviral, antibacterial, antifungal that is also found in mothers milk. Helps in the body's defense against viruses, bacteria and other pathogens, and strengthens the immune system too.

Stabilizes and improves function of the thyroid gland – benefits metabolism
and promotes losing weight.

Some people have reported that coconut oil has helped them get rid of cellulite.

Good moisturizer for the skin as well.

Its unique composition makes it a very stable oil and great for cooking and frying.

Olive Oil
This is the one we want to be eating but not really heating

A great oil for salads and topping other dishes. It is a monounsaturated fatty acid, so it is also quite stable. It is less recommended for high heat cooking, and is best added to dishes cooked at low temperatures or after cooking.
To make sure your olive oil is the real deal, make sure it is extr
a virgin, cold pressed,
organic and hardens in the fridge.
Store in a dark bottle since light, oxygen and heat turn oil rancid.

The commercial oils that most of the western world consume are extracted by
toxic chemicals at high temperatures, a process that turns them rancid,
destroys their nutrients and produces free radicals. These free radicals can contribute to a host of diseases, including cancer, heart disease, premature aging, autoimmune disease, digestive disorders and infertility.

The truth about Canola Oil
This is the one you DO NOT
want to be eating

An orig
inal Canadian oil from rapeseed, that began to be grown in 1936. It came out green in color, had a horrible odor and was toxic. Therefore it was marketed to the merchant navy ships as a lubricant. In the late 1970's , after cross-breeding, the oil was marketed under the new name "canola", derived from "Canadian oil, low acid", as the healthiest oil after olive oil.
Please don't let them fool ya! There is no connection whatsoever between canola and health, even though canola rhymes with granola.

In Israel canola is used in
almost everything and during Chanukah for 8 days we deep fry the traditional sufganiyot (donuts) and latkes in it.

Are you sure you want to fry your food in a rancid, green oil of merchant navy ships…?

Recipe of the Month

Rich-Raw Fudge & Vanilla Lime Cream Sauce

I learnt how to make this yummy fudge at The SAPA Resort
Raw Food Center in Thailand.

It's full of healthy fats and is soooo rich, you really only need a little.
It just goes to show that when our body eats the real thing we don’t really need much to feel satisfied.

Rich-Raw Fudge

1/2 cup pecans
1 cup cashews (soaked for 2 hours)

1/4 cup coconut oil
1/2 cup black raisins
1/8 cup honey
pinch sea salt

1/4 cup chocolate powder
1/4 cup ground flax
seeds of 1/2 vanilla pod

process in food processor until smooth, but still a little chunky.
Press firmly into small pan and refrigerate for 2-4 hours.

Lime Cream Sauce

1/2 cup cashews (soaked for 2 hours)
1/4 cup macadamia nuts
1/4 cup water
pinch sea salt
1-2 Tbsp honey
2-4 Tbsp lemon juice

seeds of 1/2 vanilla pod
1-2 tsp coconut oil
Blend ingredients in blender till creamy.

Enjoy with the fudge!
