Dear, Do u Dare eat Dairy? Shavuot 2010

Yes, one person CAN make a difference

I used to be addicted to cottage cheese. Especially the Israeli cottage cheese.
Got to admit…it is the best on the Planet. I would go through a 250 mg
box a day. Sometimes more. I would just eat it like that, with a spoon. I actually ate lots of milk products in general. For breakfast I would have my favorite dish called "Fatut", learned from a Yemenite boyfriend– yogurt with finely chopped mint, mixed with pieces of whole grain toast, cut veggies on the top and lots of olive oil all over. I had that breakfast for 5 years – straight! Never skipped a meal. I sometimes had it for dinner too.
I also had a lot of stomach aches….

I thought the world would collapse if I would stop eating dairy.

Well, today I don't eat dairy either, the world is still here, and I don't have any
more stomach aches.
The world might actually collapse if we do continue eating dairy…


This month we will be celebrating Shavuot. A holiday that is centered around milk products. I feel sorry for the Israeli people who will be eating so much dairy. But feel even sorrier for the cows that will have to supply us with gallons and gallons of milk.

So What’s Wrong with Dairy Products?

Many people, including some vegetarians, consume large amounts of dairy products. Here are six great reasons to eliminate dairy from your diet.


1. Osteoporosis
Milk is touted for preventing osteoporosis, yet clinical research shows otherwise. The Harvard Nurses’ Health Study, which followed more than 75,000 women for 12 years, showed no protective effect of increased milk consumption on fracture risk. In fact, increased intake of calcium from dairy products was associated with a higher fracture risk. You can decrease your risk of osteoporosis by reducing sodium and animal protein in the diet, increasing intake of fruits and vegetables, exercising and ensuring adequate calcium intake from plant foods such as leafy green vegetables and beans.

2. Cardiovascular Disease
Dairy products—including cheese, ice cream, milk, butter and yogurt
con
tribute significant amounts of cholesterol and fat to the diet. Diets high in fat and saturated fat can increase the risk of several chronic diseases, including cardiovascular disease.

3. Cancer
Several cancers, such as ovarian cancer, have been linked to the consumption of dairy products. The milk sugar lactose is broken down in the body into another sugar, galactose. In turn, galactose is broken down further by enzymes. According to a study by Daniel Cramer MD, a
nd his colleagues at Harvard, when dairy product consumption exceeds the enzymes’ capacity to break down galactose, it can build up in the blood and may affect a woman’s ovaries. Some women have particularly low levels of these enzymes, and when they consume dairy products on a regular basis, their risk of ovarian cancer can be triple that of other women’s.

4. Diabetes
Insulin-dependent diabetes (Type I or childhood-onset) is linked to consumption of dairy products. Epidemiological studies of various countries show a strong correlati
on between the use of dairy products and the incidence of insulin-dependent diabetes.

5. Lactose Intoler
ance
Lactose intolerance is common among many populations. Symptoms, which include gastrointestinal distress, diarrhea and flatulence, occur because these individuals
do not have the enzymes that digest the milk sugar lactose.

6. Contaminants
Synthetic hormones, such as recombinant bovine growth hormone, are commo
nly used in dairy cows to increase the production of milk. Because the cows are producing quantities of milk that nature never intended, the end result is mastitis, or inflammation of the mammary glands. The treatment requires the use of antibiotics, and traces of these and hormones have been found in samples of milk and other dairy products. Pesticides and other drugs are also frequent contaminants of dairy products.

My take on it

Well, today many people know that dairy isn’t healthy but besides that, think about all the torture the innocent cows go through … They have been turned into milk machines. They are sick (their udders have open sores from over milking, so they are loaded with antibiotics), depressed (never see sun, grass or go out to roam a pasture), treated so inhumanely (kept standing in their own feces and many can barely stand at all since they are so full of milk), fed food that isn’t natural for them (like ground-up dead cows - where do you think mad cow disease came from?) and are pumped with many chemicals and hormones in order to produce unnatural amounts of milk.

Do you really want that white flood full of slavery, hormones and antibiotics going into your own and your kids' bodies?
I certainly don't !

So what do you do?

Milk and dairy products are not necessary in the human diet and can, in fact, be harmful to your health. Consume a healthful diet of vegetables, leafy greens (loaded with calcium), superfoods (like chia seeds), fruits, nuts (such as almonds), seeds (tehina – sesame paste), legumes, whole grains and get plenty of sunlight (without sunscreen). These nutrient-dense foods and sunshine can help you meet your calcium, potassium, riboflavin and vitamin D requirements (which you can get free from the sun) with ease, and without the health risks of consuming milk and dairy products. If you do want dairy the best choice would be organic goat products.

Recipe of the
month
Raw and Delicious Non-Dairy Cheese Cake


Ingredients:

Dough:

2 cups pecans

1 cup pitted dates

Filling:
1\2 cup macadamia nuts
1\2 cup cashew nuts

1\4 cup fresh lemon juice
1 cup water
3/4 cup pitted dates

1 heaping Tablespoon of coconut oil
zest of one lemon
pinch of Himalayan salt

The Dough
(can use any other dough you like)
Blend pecans in a food-processor till fairly small, add dates and
blend until mixture combines into a ball or seems sticky enough to handle (you may need to add a few more dates).
Place saran wrap in a pan and gently press the dough onto the bottom and sides.

The Filling
Place all ingredients in a blender and blend till creamy.
Pour onto the dough and freeze for 2 hours.
Once frozen, caref
ully remove to a plate easing out the saran wrap and keep refrigerated.

Decoration
Slices of lemon, gogi berries, gogi berry sauce, mint leaves, strawberry sauce, blue
berries ….
