October BEING

To BE or not to BE ...

All you need is just to be silent and listen to existence. There is no need of any religion, there is no need of any God, there is no need of any priesthood, there is no need of any organization.

I hadn’t been on a vacation in quite awhile. I didn’t even thin
k I really needed one, but thanks to my friend Sophia who kind of 'pushed' - I spontaneously bought a ticket and before I knew it I was in Thailand. I had forgotten how important it is to 'just be' and do nothing - to get into that state when the brain becomes so silent that you can just lie in the hammock for hours, staring at the sea, forgetting who you are, where you came from and all your hopes and desires. It's then that you actually realize who you really are.
This usually can happen more easily when we take a break from Western life as we know it (where we get swept into the "doing" mode) and go to some remote place where we can 'just be".

When have you last "just been" ?

If you're not able to take a vacation right now, I recommend, for starts, getting a hammock and lying in it for at least 15 minutes a day…

Food Focus: Coconuts

I love coconuts! One of the reasons I went to Thailand was to sit on the white sand and sip from one while looking at the sunset. On the same evening I landed in Thailand I flew straight to Koh Samui Island and the first thing I did was to have a fresh coconut: sip the clear sweet water with a straw and then eat the soft flesh with a spoon. It was so good I had another. After having two in a row I barley could think about a coconut for a week. I guess you should never over do it, no matter how much you love something...

Coconuts are another one of gods gifts to us.

The coconut water is the breast milk of Mother Earth. It is the highest source of electrolytes in nature and a great base for any drink\shake.

Coconut flesh is the "meat" on the inside of the coconut. In young coconuts the flesh is soft while in older ones it becomes hard. The flesh of the young coconuts is a great rejuvenator of energy, sexual too.

Coconut milk is the flesh of young coconuts blended with the coconut water. Another great base for drinks and smoothies.

Coconut oil is the
product of the mature hard coconut flesh. It is the only cream I use on my body. Recommended to be used both as a cream and in cooking, you get two for the price of one!! It contains antiviral, antimicrobial and antifungal properties. It has the highest level of energy of any oil and the least calories. It is a great builder of hormones especially progesterone and testosterone – which tend to help increase levels of feel-good neurotransmitters of dopamine and serotonin.
It is also the only oil that doesn’t oxidize when heated so it is great for frying.

Since fresh coconuts are not available everywhere, try to incorporate any available coconut ingredients into your daily diet.

Recipe of the Month: Thai Salad

This is a very basic salad but it tastes soooo good, especially when you are in Thailand!
Rita – a cook in one
of the local restaurants taught me how to make it.
And as always in Thailand … food looks like art.

Serves: 2

1 large Carrot

1\4 small Cabbage
1\4 Onion
2 Lettuce leaves
1 Tomato
1 Cucumber

Lime juice (or lemon)
Olive oil

Shred the carrot. Rita used a special peeler to shred (you may use a grater – but don't grate too thin). Thinly slice the same amount of cabbage. Slice the lettuce and the onion into thin strips. Place all ingredients in a mixing bowl, add a pinch of salt, freshly grated pepper, lime juice and oli
ve oil and toss.
Place salad on a plate making a little hill and cover it entirely with thin slices of cucumbers and tomatoes.
